Regulars of Holeman & Finch know the drill. At the end of each evening, the restaurant prepares 24 double-patty cheeseburgers on house-made buns – only 24. The burger is not listed on the menu, but guests can reserve theirs at any point during their service. Oftentimes, all 24 burgers are spoken for well before the clock strikes 10 o'clock, which is when the burgers are served with pickles alongside hand-cut fries and homemade ketchup and mustard.
When the tradition began, Chef Linton Hopkins and his wife decided that only a handful of the burgers would be made and served each night. That way, the burger is done right, he says. Plus, it keeps the restaurant's other menu from being overshadowed.
While the restaurant managers encourage patrons to experience the nightly carnival they know as "burger time," they do offer another opportunity to try the burger. It is offered as a mainstay during Sunday brunch.
